
Smoked Salmon
Basic smoked salmon!!
1 Gallon water
1 Cup salt
1 Cup Brown sugar
Sprinkle of garlic salt
Mix all ingredients well and place salmon in the water. Soak in the fridge 24 hours.
Take out put on rack sprinkle brown sugar..black pepper and place in smoker and cook to your liking!!..
You can change up the recipe in many ways by adding honey red pepper flakes or any other spices when you place the salmon on the rack

"Poor man lobster"
For use with Perch, Salmon, Halibut or Sturgeon
3/4 Cup butter
1/4 Cup Sugar
1/4 Cup salt
Bring the ingredients to boil in about 3-4 inches of water.
Cut the fish into 1 inch cubes once water is boiling place fish into water and cook until fish floats to top of water (this takes just a few minutes)
Melt 1/4 cup butter with garlic salt. Drain the water off the fish then coat with the butter/garlic mixture.
This is great by itself or in fish tacos!!
Asian Sesame Salmon
2 teaspoons toasted Sesame seeds
I teaspoon minced garlic
1 teaspoon minced onion
¾ teaspoon ground ginger
(optional ½ teaspoon crushed red pepper flakes
1/3 cup honey
2 tablespoons soy sauce
(optional chopped green onion)
Salmon Fillets!
Preheat oven to 375
Place salmon on cooking sheet
Coat fillets with mixture
Bake 20 minutes coating the salmon on occasion
Cook until the salmon flakes easy.
Next day if you have leftovers mix them with Mayo and pickles like you would Tuna and put them on sandwiches. Super good!!
Pan fried Parmesan fish
This recipe can be used for any fish but works best on white fish like Ling cod, Halibut and Rock Fish.
Parmesan Cheese (fresh shredded or powdered)
Black Pepper
Salt
Butter or oil
Melt the butter in a pan or warm the oil
Cut the fish into serving size
Sprinkle each side with the salt and pepper
place in pan when hot sprinkle the cheese on top.
Once it has cooked about half way flip the fish and put cheese on the other side.
For amazing taste use the freshly grated cheese and just before you serve it sprinkle on top and place a lid on the pan melting the cheese.
